Zucchini Hash Browns

Zucchini Hash Browns


  • 300 g Yellow or Green Zucchini
  • 2 tbsp grated parmesan or 1 tbsp grated parmesan and 1 tbsp toasted brown bread crumbs
  • 1/4 tsp Salt
  • 1/2 tsp Garlic powder
  • 1/2 tsp black Pepper
  • 2 tbsp extra virgin olive oil/ Butter
  • 1/2 tsp Onion powder (optional)
  • 1 egg


Clean Zucchini and cut its both ends . Grate zucchini and add it to a bowl

Add salt to zucchini and mix well. Set it aside for 8-9 minutes

Squeeze excess water from Zucchini using cheese cloth or muslin.

Now transfer zucchini to a bowl.Add egg, salt, pepper, garlic powder and onion powder to the bowl

I have used mix of cheese and toasted brown bread crumbs. You can use either of the two or mix of both.

Now mix everything well

Heat non stick pan with olive oil or butter. I have used extra virgin olive oil here, you can use any healthy oil of your choice

Using ladle, add spoonful of zucchini mix onto pan, flatten it with back of ladle

Cook on both sides over medium heat for 2-3 minutes each side until golden brown

Serve these delicious Hash browns hot
